Ricotta al Forno



Yesterday we enjoyed Ricotta al Forno. 
As it was tasty and easy to make and a meal perfect for a warm summer day I would like to share the recipe with you:

Line a cake tin (1,2 litres) with parchment paper, grease the rest of the tin and sprinkle the edges with bread crumbs.

Mix: 500 g ricotta, 4 eggs, 100 g freshly grated parmesan cheese, 2 tbsp chopped Italian parsley , 2 tbsp chopped mint leaves, 1/2 coffee spoon salt, black pepper freshly grinded.

Pour the mixture into the prepared tin. Bake in the preheated oven for about 40 minutes at 180° C. 

Serve warm or cold. 

Not much work is it? Plenty of time to sit down, put your feet up and enjoy this Saturday!
