These are our favourite brownies we made yesterday to have coffee with in the afternoon. If you like to try them out, follow this recipe:
350g dark chocolate (around 50-70% cocoa solids), broken into pieces
250g unsalted butter, cut into pieces
3 large eggs
250g dark muscovado sugar
85g plain flour
1 tpsp baking powder
a) Heat oven to 160C, gas 3. Butter and line the base of a shallow 23cm/9in square cake tin.
b) Melt the chocolate and butter together, then stir well and cool.
c) Whisk the eggs until pale, then whisk in the sugar until thick and glossy and well combined. Gently fold in the melted chocolate mixture, then sift in the flour and baking powder and gently stir until smooth.
d) Pour into the prepared tin and bake for 30-35 mins, or until firm to the touch. Test by inserting a wooden cocktail stick into the middle - there should be a few moist crumbs sticking to it. The mixture will be soft in the centre, but will firm up on cooling.
e) Cool in the tin for at least 1 hr, then cut into square.
Writing about this makes me crave for more.... I'll be heading to the kitchen now!
