I am pleased to share the recipe








The recipe for the apricot cake is as follows:


1,25 kg  fruits cored and cut into thick slices (I used apricots but  it tastes even better with apples)
Baking tin greased and lined with baking parchment


400 ml cream
200 g sugar
1 sachet vanilla sugar
peels of one lemon
5 eggs
375 g flour
1 sachet baking powder


Frosting:
100 g butter
100 sugar
4 tbsp milk
60 almond flakes


Pour cream into a mixing bowl, add vanilla sugar, sugar and lemon peel and mix until semi stiff. Add the eggs one after the other and mix in. Mix flour and baking powder and add to the mixture, stir.


Pour the mixture into the baking tin. Arrange the fruits in rows.


Put into preheated oven (200°C) for 15 minutes.


In the meantime prepare the frosting:
Bring butter, sugar and milk to the boil, add the almond flakes and mix well.


After 15 minutes add the frosting onto the cake using a tablespoon.


Put back into the oven for another 15-30 minutes.


Sprinkle with icing sugar when cold and enjoy.


I have been baking this cake since 12 years and I have always been very satisfied with the result. If you do try it please report on the outcome!

  2. It sounds truly delicious and the kind of sweet which appeals to the Italian taste (at least where I come from, with our Norman background!), with all that lovely cream! In the Campania region the put custard in every cake ans pastry, which I don't like. We prefer cream.

    I'll make this delicious cake in Italy, and will let you know what everyone thought of it. I, too, think it would taste delicious with apples. I love anything with apples in it!
