Time for something chewy...




















Yesterday was time for baking a family favourite: Chewy oat and seed bars. Here comes the recipe:

300 g porridge oats
100 g sunflower or pumpkin seeds (or a mixture of the two)
50 g sesame seeds
50 g desiccated coconut
50 g plain flour
200 g butter
200 g golden syrup
150 g soft brown sugar
150 g chopped dried fruits (I used cranberries and sultanas)
1 tpsp vanilla extract


Heat oven to 160°c. Line a 20x30cm Swiss roll tin with parchment.
In a bowl placde the oats, seeds, coconut and flour and mix together.
In a saucepan melt thee butter, golden syrup and sugar. Stirn in the chipped dried fruit and vanilla.
Pour into the dry ingredients and mix well until evenly combined.
Press the mixture into the prepared tin and bake until golden and slightly firm. (30 minutes).
Allow to cool in the tin and cut into pieces. 


As you can see it is dead-easy otherwise I would not have managed 'cause you know...
